Every week we have Taco Tuesday night (yes we are HUGE Lego Movie fans). I try and mix it up and have a few different ways we eat Mexican meals.

One of my favorite Mexican meals at home is gluten-free burrito bowls. Burrito bowls are a perfect way to eat Mexican gluten-free because you don’t have to worry about tortillas.

Homemade Gluten-Free Taco Seasoning

Being gluten-free, I make my own gluten-free taco seasoning. It’s so much healthier not having any extra additives (like MSG). I bet you already have all the spices you need for this gluten-free taco meat seasoning in your pantry.

The base of a burrito bowl is usually rice, but lately, I have been switching it up and making it with quinoa.

I have found the best way to cook quinoa, so you get the best taste and tender texture, is in a rice cooker. The quinoa requires more water than rice, so you will need 2 cups of water for every cup of quinoa that you cook.

You can make the rice or quinoa even faster cooking it in an Instant Pot. I got one on sale during Black Friday and it’s been a total game changer for me!

The best part of a burrito bowl is the toppings. I pile on avocados, black beans, black olives, cheese, cilantro, corn, cucumbers, lettuce, sour cream, taco meat, and tomatoes. The sky is the limit when it comes to building your perfect gluten-free burrito bowl.

This is a great meal for families. My kids love to pick out their favorite toppings, just like an ice cream sundae bar. Burrito bowls also can easily be modified for either the Paleo or AIP diet as well.

Gluten-Free Burrito Bowl

Super easy, super yummy! Homemade gluten-free taco seasoning straight out of your pantry. Gluten-free burrito bowls will be a family favorite for your next Mexican food night.

Ingredients 

  • 1 pound ground beef
  • 1 tablespoons cumin
  • 2 teaspoons onion powder
  • 1/2 teaspoon garlic powder
  • 2 teaspoons paprika, (leave out if following AIP)
  • 2 teaspoons oregano
  • 1/2 teaspoon salt
  • 1 cup Rice or quinoa
  • Your favorite toppings

Instructions 

  • Cook rice or quinoa according to package directions.
  • Spray a large pan with cooking spray.
  • Add your ground beef and salt to taste.
  • Add the seasonings to the ground beef.
  • Cook meat until browned and drain oil if necessary.
  • Build your bowl with rice or quinoa as the base, add taco meat and your favorite toppings.
  • Enjoy!
