Gluten-Free Turmeric Coconut Chicken Curry.  Enjoy the exotic flavors of chicken curry without the heat. An aromatic curry sauce is made with unsweetened coconut milk, turmeric, cinnamon, ginger, honey, and raisins. It is a perfect recipe for those following the Autoimmune Protocol (AIP)  or Paleo diets.

Autoimmune Protocol Diet

I SO enjoy the exotic flavors of curry, but seriously I can’t handle spicy food. While my husband and I were on the Autoimmune Protocol diet, I had to find new ways to prepare flavorful meals.

One of the dishes that I created was a gluten-free turmeric coconut curry chicken. This curry is influenced by both Indian and Morrocan cuisines.

When I was a teen, my family hosted a Moroccan Family at the Naval War College for a year. It was an amazing experience to be able to learn about the Moroccan culture first-hand from new friends.

The center of any culture is food and Mrs. Ameena would cook amazing Moroccan meals for my family. She then went on and taught my mother her favorite Moroccan dishes.

This gluten-free turmeric coconut chicken curry reminds me of some of my favorite meals she would cook for us, spiced chicken with raisins and hard-boiled eggs.

Dairy-Free Cooking

This recipe is naturally dairy-free because it is made with canned coconut milk. Some of my favorite dairy-free alternatives that I like to bake and cook with are almond, cashew or coconut milk. I also like baking with coconut oil or Earth Balance or Smart Balance butter.

Curry sauce without the heat, nightshade free

This aromatic curry sauce is made with unsweetened coconut milk, turmeric, cinnamon, ginger, honey, and raisins. It is made without nightshades and is not spicy. It is a perfect recipe for those following the Autoimmune Protocol (AIP) or Paleo diets.

Gluten Free Turmeric Coconut Chicken Curry {Paleo, AIP}

Gluten-Free Turmeric Coconut Chicken Curry. An aromatic curry sauce is made with unsweetened coconut milk, turmeric, cinnamon, ginger, honey, and raisins. It is a perfect recipe for those following the Autoimmune Protocol (AIP)  or Paleo diets.

Ingredients 

  • 2 chicken breasts
  • 1 can of unsweetened coconut milk
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 cup of raisins or chopped dates
  • 2 hard-boiled eggs
  • fresh chopped cilantro, rinsed
  • 1 tablespoon coconut oil or olive oil
  • salt to taste

Instructions 

  • Boil the two eggs for 13 minutes. Cool in a bowl of ice water in the refrigerator.
  • Cut chicken breasts into bite-sized pieces.
  • Salt chicken to taste.
  • Add 1 tbsp of coconut oil or olive oil in a large pan.
  • Over medium/high heat, saute chicken pieces until they are golden brown.
  • Add the can of coconut milk to the pan and stir.
  • Add the honey to the coconut milk mixture and stir.
  • Add the spices and raisins to the coconut mixture and stir to combine ingredients.
  • Bring to a boil. Then lower to a simmer. Stir occasionally until coconut milk sauce thickens.
  • Peel and chop hard boiled eggs.
  • Serve chicken over cauliflower rice and garnish with the chopped hard-boiled egg and fresh chopped cilantro.
  • Enjoy!

  2. I am new to Paleo AIP and this is the BEST recipe so far. It satisfies the craving for spice. I add carrot sticks and scallions and serve it over cauli rice. Trying it on organic brown rice elbow pasta tonight. Have made it 3 times already!

  4. I added carrots and coconut flakes during step 8. Upped all the seasonings too. Once I lowered it to a simmer I added frozen asparagus (the kind you steam for 4 minutes). I also only used maybe half the amount of raisins it called for. Delicious!

    1. Hi Amy! It depends on where you are at in the reintroduction phase of the AIP diet. If you are at the stage of reintroducing eggs then add the hardboiled eggs to the recipe. If you are not at that point in the diet, then leave the hard boiled eggs out of the recipe. I hope you enjoy it!
