It’s that time of year and football season is back in full swing! That means it’s time for game day recipes. I’m a huge fan of buffalo wings but I’m not a fan of the time and the mess that comes along with making them.

I thought about how I could capture the buttery and spicy flavor of hot wings with the creamy and tanginess of blue cheese dressing all in one easy bite.  That’s when I came up with my recipe for gluten-free buffalo chicken bites.

They are super easy to make and cooks in less than 30 minutes. My recipe for gluten-free buffalo chicken bites will be a crowd pleaser for game day or your next party. So much so you just might want to make a double batch!

Buffalo Chicken Bites {Gluten-Free}

Take the mess out of buffalo wings and try my easy gluten-free buffalo chicken bites. Perfect for game day, as a snack or for your next party.

Ingredients 

  • 1 1/2 cups gluten-free Bisquick, If you don’t have gluten-free Bisquick you can use this recipe to make your own.
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 12.5 oz gluten-free canned chicken breast, drained (I used Great Value brand from Walmart)
  • 1/4 cup gluten-free buffalo wing sauce, I used Sweet Baby Ray's
  • 1/4 cup gluten-free blue cheese dressing, I used Kraft brand
  • 3/4 cups milk

Instructions 

  • Heat oven to 350 degrees.
  • Spray a cookie sheet with cooking spray or line with parchment paper.
  • In a large bowl add gluten-free canned chicken, buffalo wing sauce and blue cheese dressing.  together. Stir to fully coat the chicken with the sauces.
  • Add the cheeses and the gluten-free Bisquick to the chicken mixture. Mix until fully combined.
  • Add the milk to the ingredients and mix until fully combined.
  • Make small 1″ balls from the mixture. You can use a rounded tablespoon to make your balls.
  • Bake for 22 to 26 minutes until golden brown.
  • Serve with extra buffalo wing sauce and blue cheese dressing for dipping.
  • Enjoy!

  1. Made 2 batches of these for a get together. 1 with blue cheese and the other with ranch and you really can’t tell much of a difference between the two. Very good either way and the perfect finger food.

  2. Made these for my daughter who eats a GF diet and everyone in the family ended up loving them. We switched out the bleu cheese for Ranch dressing and they still tasted wonderful. The pancake mix makes them a little sweet.
