Cinnamon Rolls
I absolutely adore cinnamon rolls, really cinnamon anything! One of the things I missed the most since going gluten-free was cinnamon rolls.
I was looking for gluten-free cinnamon roll and cinnamon buns recipes online and they seemed so labor intensive. These recipes had lots of steps and took lots of time.
This busy mama of four does not have time for that!
So when I found this recipe for cinnamon roll cake on Chef In Training‘s blog I was so excited. I found that the cinnamon roll cake was easy to modify to be gluten-free.
A lot of gluten-free cooking is finding ways to modify your favorite recipes to be gluten-free.
Gluten-Free Flour
These gluten-free crepes were made with a rice flour blend. I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.
Pro Tip
The best way to measure gluten-free flour is the “spoon & level” method. Using a spoon, scoop the flour into the measuring cup. After you’ve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.
Dairy-Free Baking
I have also included a dairy-free option to my gluten-free cinnamon roll cake recipe. My husband, my youngest son, and I are all dairy-free.
I promise it is just as delicious made with the dairy-free butter and dairy-free milk. For this recipe, I like to bake with almond or cashew milk and Smart Balance or Earth Balance butter.
So, you too can enjoy a gluten-free and dairy-free cinnamon roll cake.
Gluten-Free Roll Cinnamon Cake
Gluten-free cinnamon rolls can be hard to recreate. With this gluten-free cinnamon roll cake recipe, you get all of the flavors of cinnamon rolls and cinnamon buns without all of the work!
This is not your average cinnamon cake. It has both the texture and the taste of a gooey cinnamon roll.
Seriously this is one of my favorite gluten-free cakes!
Cinnamon rolls are not just for breakfast anymore. Enjoy!
I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.

I also have also turned this amazing cake into a recipe for Gluten-Free Cinnamon Roll Muffins too!

I have made this twice and both times it turned out perfect!
Jay says
My church ate the entire thing in just a few minutes during breakfast hour!!! The non-gluten free people loved it and didn’t taste a difference. It took longer to cook because of the amount of topping but it tasted so good and was worth the extra couple of minutes. I love this recipe but may half the topping part next time.
Ryder says
This is AMAZING! I made this as a surprise for my girlfriend and she said it’s one of the best desserts she has ever had.

Maren Jones says
For Easter brunch today, I made a half batch in an 8×8″ pan, convection baked at 325 degrees for 30 minutes. I used Bob’s Red Mills GF Baking flour, which had xanthan gum in it already. My 22 year, who is not gluten intolerant, said they were “the best cinnamon rolls” he’d ever had. They were delicious. However, they were extremely sweet – much sweeter than Pillsbury’s cinnamon rolls, for instance. Next time I will try reducing the brown sugar in the topping and/or substituting maple sugar. (I will also use less of the icing.) I may also add finely chopped pecans to help lower the glycemic index, if only a little. Plus, I think finely chopped pecans would be delicious in this cake. Thank you for this recipe. I have not had anything like a cinnamon role since I became GF nine years ago, and this cake was a real treat.
Audrey says
Thank you so much Maren for the wonderful 5-star recipe review! I am so happy that everyone enjoyed the cinnamon roll cake. You are so welcome, I love sharing the recipes I make for my family. Thank you again!

I took one bite of this and are you kidding me? Where has this been all my life? Wow. This satisfied my craving for cinnamon rolls and it’s actually way better and far less hassle. I made this for the first time to bring to dinner at my neighbor’s house tomorrow. I’m sure they will love it. The only change I made was for the cinnamon/brown sugar mixture I only added 1/4 cup of butter to cut back on the fat a bit and doubled the cinnamon. It still turned out great. Thank you!
Audrey says

I made both the cake (GF) and the muffins (GF/DF) today! Delicious! I was able to satisfy my craving for cinnamon rolls, but w/o the long process. (my only advice would be to add more cinnamon. I added some extra to the batter and also put some into the cream cheese frosting I made).
Audrey says
Thank you so much Audra for the wonderful recipe review! I am so happy that you enjoyed the cinnamon roll cake and the muffins. Thank you again!

Nice! It’s a quick version of making cinnamon rolls for my celiac family! Made them this morning and I used this blend since I don’t have the Pillsbury on hand: 1 cup almond flour, 1 cup brown rice flour, 1/3 cup sweet rice flour, 2/3 tapioca flour. It worked out deliciously!! ❤️

It’s awesome! I took it to church during the breakfast hour and it was gone…even the non-gluten free people loved it. Maybe cut the cinnamon topping in half? It took longer to bake but it was worth it. I have handed out this recipe to the people who asked for it! Big hit, my family was disappointed that there wasn’t any left after church (and my dad doesn’t like gluten free foods!). It’s a keeper!

Thank you! I hosted Christmas and had 7 people here. I am the only one that is gluten free. This was a hit. This will definitely be my go to for special occasions!
Easy to make, great directions. Thanks for the recipe!
Side note, I did not have a 9×13 pan, but a 9” round. I cooked as directed, but middle wasn’t done so I loosely covered with foil and checked every 7 minutes until done.

Very close to my favorite non gluten free coffee cake recipe. I did cut the recipe in half, no problem. I did not add the glaze, it wasn’t needed. I also reduced the sugar by half (so 1/4 of what the recipe said since I halved the recipe). I will be making this again. ?

OH MY! I have been gluten free for about 5 years now and cinnamon rolls (and croissants) are what I have missed the most! I get cravings for them every couple of months, but to no avail….that is until I found your recipe! You are remarkable and THANK YOUUUUUUU! I made these earlier this afternoon and couldn’t believe what I was eating! All of the texture and gooiness (and even crunch on the top) without all of the extra work that goes into cinnamon rolls! You have made my dreams come true as I and my 2 GF kids can now enjoy something as delicious as the regular folk! Also…my non-GF brother-in-law and husband LOVED these too! Going to give this a try! Do you have any recipes for baked goods without xanthan gum? Although it is “safe,” many people with Celiac, including myself can not eat it. (many digestive experts also recommend not eating it…) Thanks!
Audrey says
Hi Kim! I have only baked with xanthan gum. I know that another alternative is guar gum, but I have not tried it. I know that Betterbatter is working on a gum-free gluten-free flour and I will definitely try it when it comes out. I hope you enjoy the cinnamon roll cake!
