Cinnamon Rolls

I absolutely adore cinnamon rolls, really cinnamon anything! One of the things I missed the most since going gluten-free was cinnamon rolls.

I was looking for gluten-free cinnamon roll and cinnamon buns recipes online and they seemed so labor intensive. These recipes had lots of steps and took lots of time.

This busy mama of four does not have time for that!

So when I found this recipe for cinnamon roll cake on Chef In Training‘s blog I was so excited. I found that the cinnamon roll cake was easy to modify to be gluten-free.

A lot of gluten-free cooking is finding ways to modify your favorite recipes to be gluten-free.

Gluten-Free Flour

This gluten-free cinnamon roll cake was made with Pillsbury gluten-free flour. It is an all-purpose gluten-free rice flour blend that already has the xanthan gum in it.

I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.

Pro Tip

The best way to measure gluten-free flour is the “spoon & level” method. Using a spoon, scoop the flour into the measuring cup.  After you’ve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

Dairy-Free Baking

I have also included a dairy-free option in my gluten-free cinnamon roll cake recipe.  My husband, my youngest son, and I are all dairy-free.

I promise it is just as delicious made with dairy-free butter and dairy-free milk. For this recipe, I like to bake with unsweetened almond milk and Smart Balance butter.

So, you too can enjoy a gluten-free and dairy-free cinnamon roll cake.

Gluten-free cinnamon rolls can be hard to recreate. With this gluten-free cinnamon roll cake recipe, you get all of the flavors of cinnamon rolls and cinnamon buns without all of the work!

This is not your average cinnamon cake. It has both the texture and the taste of a gooey cinnamon roll.

Seriously this is one of my favorite gluten-free cakes!

Gluten-Free Cinnamon Roll Cake

Do you miss cinnamon rolls since going gluten-free? Now you don't have to! This cinnamon roll cake has both the texture and the taste of a gooey cinnamon roll. Cinnamon rolls are not just for breakfast anymore.

Ingredients 

Cake:

  • 3 cups *gluten-free flour, I like Pillsbury gluten-free. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.
  • 1 1/2 teaspoons xanthan gum, leave out if your flour already contains it.
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 4 teaspoons gluten-free baking powder
  • 1 1/2 cups milk, For dairy-free I like cashew milk, almond milk or coconut milk.
  • 2 eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsalted butter, melted (For dairy-free I like Earth Balance or Smart Balance.)

Topping:

  • 1 cup unsalted butter, softened (For dairy-free I like Earth Balance or Smart Balance)
  • 1 cup packed brown sugar
  • 2 tablespoons gluten-free flour
  • 1 tablespoon cinnamon

Glaze:

  • 2 cups powdered sugar
  • 5 tablespoons milk, dairy-free use cashew, almond or coconut milk
  • 1 teaspoon vanilla

Instructions 

Cake:

  • Preheat oven to 350° F.
  • Spray a 9×13 glass baking pan with cooking spray.
  • In a large bowl add the gluten-free flour, xanthan gum (leave out if your flour already has it), salt, sugar, baking powder, milk, eggs, and vanilla and mix until fully combined.
  • Once combined stir in the melted butter.
  • The cake batter will be very thick and sticky. Pour into the prepared 9×13 baking pan.

Topping:

  • In a large bowl, cream butter, brown sugar, gluten-free flour and cinnamon together with a mixer.
  • Drop heaping tablespoonfuls of the butter mixture into the cake batter.
  • Use a knife to swirl the butter mixture through the cake.
  • Bake at 350 degrees for 35-40 minutes. Use a toothpick to check and see if the center is done.

Glaze:

  • In a medium bowl, whisk the powdered sugar, milk and pure vanilla extract together.
  • Pour over the warm cake.
  • Enjoy!
  • Store in an air-tight container.

  1. I ground up oats to make oat flour, adding in corn starch. I did the method of using a spoon to measure the oat flour then leveled off with a knife. Your recipe says the batter will be thick and sticky but my batter was super watery, so much so I had to add another cup of flour. I measured everything exactly. The cake was good. Next time I am not going to put many swirls in the topping. Because I had to add another 1/2 stick melted butter, cinnamon. and brown sugar to spread on top. So it was moist then I put it back in the oven to finish off. I added all the glaze, but came back over it with a thicker glaze in which I added that had butter and more vanilla in it. This was because hubs said it was dry.

  2. Is there any butter substitute without soy, coconut, dairy or that pea product that Earth Balance Soy free has in it?
    My husband can’t have dairy, soy, coconut, gluten or peas.

    1. Hi Michelle! Unfortunately, I can’t think of a butter substitute that doesn’t include any of those. Sorry about that!

        1. Avocado oil could definitely work! I was hesitant to recommend it because many avocado oils sold in stores contain soybean oil as well. If you have an avocado oil you’re comfortable with, you can try a simple 1:1 substitution for the butter in this recipe. Let us know how it turns out!

  3. I made this as Christmas breakfast for my GF girl while the guys all ate traditional cinnamon rolls. This was her first experience with anything like this (because I’ve been to scared to tackle the real deal), and she loved it! I used Bob’s Red Mill GF flour, unsweetened almond milk, and real butter. Yum!!

    I had a bit of difficulty testing for doneness. Perhaps because of the butter-and-sugar crust that had formed near the center of the cake? My toothpick came out clean, but the center was underdone. Next time, I’ll try tapping the top of the cake as my doneness test.

    This recipe is definitely a keeper!

  6. I made this cake for an annual family Christmas party. I didn’t label it gluten free, and it was gobbled up in a flash. I will admit, I was probably the first one who grabbed a piece. And was I glad I did! What a wonderful cake! So moist, so delicious, and it was like eating the center of a cinnamon roll! Everyone loved it, and I didn’t announce it was gluten free to anyone, so I had multiple requests for the recipe. When Mama says she knows Gluten Free, she ain’t lying! 🙂 That is why my copy of her cookbook looks like it was run over by a semi. I use it all the time! I don’t know what I’d do without her!   13. Made this today. Oh my lands!!!! Incredible!! I have been gluten free for almost two years (celiac) and satisfying desserts are hard to do. This fit the bill perfect!! A little sweet, but i dont eat alot of sweets. Very very very good.

  16. Excellent! This recipe is definitely a keeper. I used Bob’s Red Mill 1 to 1 baking flour. 1 cup of this particular flour weighs 148 grams. I also used homemade oat milk, and country crock’s plant butter with olive oil.
    I can’t believe how good this cake is!

  18. OH WOW!!!!!!!! Absolutely delicious! I used oat milk in mine and instead of a stick of butter. I used half a stick of butter & apple sauce. And because i used apple sauce i used less sugar (a half a cup). Will definitely use less butter for the topping, LOL tryn to lose weight. And for the glaze halved the powdr sugr & used 1 tablespoon of vanilla and 1 tablespoon of oat milk. ALL I CAN SAY IS YUMMM!!!!

  23. My daughter just switched to Gluten free eating a few months ago. Normally on Christmas morning I make a special breakfast involving dough in a can. Since I no longer could make that I went looking for a new tradition to make, and I definitely found it in this recipe! I used Bob’s Red Mill GF flour, I baked it the night before and left it in an airtight container on the counter overnight. It was ready to go and delicious the next morning! My daughter loved it and my husband said it’s the best gluten free recipe I’ve ever made.

  24. I love anything that tastes like a cinnamon roll and this recipe is delicious without all the kneading, rolling and letting rise! I made it vegan as well and it turned out wonderful. It is best eaten the first day, but it was okay the second day as well. I used Pillsbury all-purpose GF flour and had great luck! Would be a wonderful Christmas morning casserole and super easy!

  26. This is such a great recipe. I used Presidents Choice GF flour blend and it turned out perfectly. I made 1.5 times the recipe and made a 9×13” and an 8×8” pan. Definitely a keeper recipe. Thanks for sharing it.

It is all I hoped it would be – without having to do any kneading, rolling, cutting and waiting that goes along with traditional cinnamon rolls. It doesn’t get any better than this.       1. Since I was curious, did the math; with each half cup being 8 tablespoons (per stick), that’s 24 tablespoons total in the recipe, so about 1.5 tablespoons per serving since it serves 16. A lot of people use more than that on a baked potato, just for comparison. However, since I’ve made this 4 or 5 times, I can tell you that it would be difficult to eat only a 1/16th sized piece of this cake!

My wife loves cinnamon rolls but after being diagnosed with Celiac she thought she had to give them up, This recipe was delicious and has given her a new loving for her favorite food.   43. This is a great recipe, really delicious. I put half of the butter cinnamon swirl in the cake and added 1/2 cup of chocolate chips, I will up it to a full cup next time… the chocolate was really good in the cake. I halved the icing since I don’t like super sweet desserts and added some cinnamon and pinch of salt to it. So good!

  44. I made this 2x now. 1st time with BM 1:1 GF Flour. Once with GF Jules 1:1 Flour. I subbed in Stevia sugar for the white sugar and Swerve brown sugar blend for the brown sugar and cinnamon part. (Both times because we have diabetics in the house). Skipped the icing. We liked this recipe better when made with the BM GF flour, as it was fluffier. But I’ll hafta say, this recipe is a keeper. IT.IS.SOOOOO.GOOD…

  46. I made this for breakfast this morning and it is amazing! The only thing I’d do differently is to let it cool a bit before I put the icing on it but my husband and I could not wait to try it. Next time I will make it in 2 pans so I can freeze one and there WILL be a next time.

  48. This is an amazing recipe. I wish I had been able to follow it exactly, but I was not. Regardless, what it helped me make was SO delicious, and looks very much like the pictures. I did not have gluten free flour, but I DID have a GF Krusteez cinnamon crumb cake mix. I measured out what was in the box and it was about the same amounts as half of this recipe. I halved the amounts of wet ingredients called for here, and left out all dry ingredients(figuring they were in the box mix). I mixed the amount of butter and flour called for here into the cinnamon sugar mix in the box and followed the recipes instructions on how to swirl and bake it. It’s so much like the gooey cinnamon rolls I remember…and so much better than what that box mix would have been otherwise! Thank you!

  49. My Oh My. Always a gamble to make something for the holidays without a trial run, but it’s 2020 and I don’t even know what real pants are anymore. However, this was OUTSTANDING. In a time of reinventing traditions, completely sold on making this a new one. I’ve really missed *good* cinnamon rolls, and this fits it. Pops even said “I can’t tell this is gluten free!” Mama really does know GF!

  51. This was so amazing! I used the Namaste Perfect Blend Flour, and did not add any xanthan gum, as that flour mix does contain xanthan gum. I halved the recipe, since it was just for me and used an 8×8 pan. It was so tough to not devour the entire pan, but now I get to look forward to leftovers!

  56. I’ve made this twice-it’s fabulous! The cake is moist and delicious and the topping is crusty and super sweet, just like the real cinnamon roll.
    I tried making it with half the sugar mixture the first time and there wasn’t enough gooey stuff.
    I like my cinnamon-sugary gooeyness with nuts, so I added chopped pecans to swirl into the batter with the sugar/butter mixture. Some of it seeped to the bottom and created that sticky, sweet, semi-crunchy outside “crust” in areas. So yummy!

  58. Wow, what a treat! I don’t usually bake or eat sweets but wanted to make this for my husband. Halved the recipe (Thank you for the converter!). Made in an 8×8 Pyrex. Used Bob’s Red Mill 1:1 flour, monk sugar for white, and toasted coconut almond milk. It was done in 35 mins on the spot! Great warm and after it cooled. I want to try replacing the brown sugar with coconut next time.

  69. For Easter brunch today, I made a half batch in an 8×8″ pan, convection baked at 325 degrees for 30 minutes. I used Bob’s Red Mills GF Baking flour, which had xanthan gum in it already. My 22 year, who is not gluten intolerant, said they were “the best cinnamon rolls” he’d ever had. They were delicious. However, they were extremely sweet – much sweeter than Pillsbury’s cinnamon rolls, for instance. Next time I will try reducing the brown sugar in the topping and/or substituting maple sugar. (I will also use less of the icing.) I may also add finely chopped pecans to help lower the glycemic index, if only a little. Plus, I think finely chopped pecans would be delicious in this cake. Thank you for this recipe. I have not had anything like a cinnamon role since I became GF nine years ago, and this cake was a real treat.

I made this for the first time to bring to dinner at my neighbor’s house tomorrow. I’m sure they will love it. The only change I made was for the cinnamon/brown sugar mixture I only added 1/4 cup of butter to cut back on the fat a bit and doubled the cinnamon. It still turned out great. Thank you!

    Thank you for sharing this recipe. I’m looking forward to trying it! But I have two questions and hopefully they don’t sound too silly.
    The first one is about the instruction for mixing the cake ingredients—do I use a spoon or a hand mixer? The other question is the flour. I have Glutino gluten free all purpose flour in my pantry. It doesn’t contain xanthan gum, but it has acacia gum. Do I need to add xanthan gum in this case?

    1. Hi Sandra! There is never a silly question when it comes to gluten-free baking friend. For mixing the cake, you can use a spoon or a hand mixer. I would recommend using a hand mixer because the batter is really thick. I have never tried the Glutino gluten-free flour. I think that the acacia gum acts similar to the xanthan gum, so I would think that you would not need to add anything extra to the flour. I looked on the Glutino website and it says that it’s a cup for cup flour. I hope you enjoy the cinnamon roll cake!

  113. I used the bobs red mill 1 to 1 and baked for 36 minutes. When I cut into it I realized the cake was not quite done so I put it back in for another 7 minutes. After letting it cool, I cut a slice and found it still not fully cooked. The taste is delicious, but could this be just my oven or possibly my flour choice?

    1. Hi Kate! I think it may be your flour choice. Anytime I have test baked with Bob’s Red Mill 1 to 1 the batter has always been wetter. The Bob’s Red Mill has sorghum flour in it and the Pillsbury gluten-free flour is a rice flour blend, so it bakes differently. I have not had anyone else let me know that the cake did not bake fully with using Bob’s Red Mill. If you think your oven might be off, you could get an oven thermometer to check, I’ve had to do that too to make sure my oven was not running too hot. I hope you will try the recipe again with the Pillsbury gluten-free flour or a gluten-free flour blend with similar ingredients. I hope this helps. The cinnamon roll cake is one of my family’s favorite cakes.

    I’m planning to make this for my family Christmas tomorrow. My sister just found out a few months ago that she has celiac. I was hoping to make a dessert that she can enjoy (along with the rest of us)
    I cannot find xanthum gum anywhere. I live in a small town too and no that it’s this close to Christmas I’m going to have to leave it out.
    I have the bobs red mill all purpose gf flour.
    Is this going to be ok without the gum?

    1. Hi Melanie, that is so wonderful that you are making this for your sister! I do not recommend using Bob’s Red Mill All Purpose flour gluten-free for this recipe (red bag). Their all-purpose flour is made with garbanzo bean flour and it has a very different taste and texture than gluten-free flours made with rice flour (some people don’t care for the taste). Bob’s Red Mill also makes a Cup for Cup gluten-free flour (blue bag). I highly recommend you use a gluten-free flour blend that is made with rice flour. I bake with Pillsbury gluten-free flour and a lot of my readers like King Arthur, Pamelas or Betterbatter. Gluten-free flour blends that are “cup for cup” with have xanthum gum already in it. This cake is one of my most popular recipes and my family’s personal favorite. I hope you are able to find a gluten-free rice flour blend to make it and that everyone enjoys it! Merry Christmas!

      1. I’ve never tired Cup4Cup but I know a lot of people like it. If you have a dairy allergy or sensitivity you cannot use it because it has milk powder in it. Thanks for the recommendation Karen!

I too use the Pillsbury gf flour, but I also by Bob’s Red Mill 1- to-1 baking flour at a Cash and Carry in 25lb bags for about $22.   126. Quick question…what does the zanthan gum do? I am new to gluten free eating and trying to make some of the comfort foods I used to make.

    1. Hi Karen! I like to use flours that are a cup for cup and already have the xanthan gum already in it (like the Pillsbury gluten-free flour). Here’s the reason why xanthan gum is used in gluten-free baking. “Because baked goods made with wheat flour depends on gluten for structure, those made with gluten-free flours will often require a thickener to keep them from crumbling. For this reason, many gluten-free baking recipes call for Xanthan Gum to replace the elasticity and texture of gluten.” (from thespruceeats.com)

We have a Christmas tradition of having cinnamon rolls but my mom has been going through chemotherapy, so understandably, she wasn’t up to making them. I’ve had to take over kitchen duty and I’m pretty new to cooking and baking so i wanted something that would be that would be a good “replacement” and not be too difficult.

    Pretty sure a heavenly chorus rang out as soon as I took that first bite. I’ve been gluten free for over 10 years and I’ve had some really good foods but this was magical. My parents really liked it too.

    The only difference is I used Featherlight flour mix. I forget who makes that one so I hope I’m not violating any copyrights or anything. I will be making it with pillsbury tomorrow though as that’s what we have available currently.

  134. I just bought Pillsbury flour but haven’t used it till today. I tried this cake (halved the recipe, because new gluten free recipes and flour make me nervous). Baked it in a 8 x 8 glass pan. It is fantastic! I haven’t had a cinnamon roll in years but this tasted very much like one (and the smell, yum). I didn’t make glaze. Never liked it on my cinnamon rolls. It’s too much for my husband and I to eat so I have cut small squares,wrapped in Saran wrappped and placed in small freezer containers.     1. Hi Brandi! I usually use Gluten Free Mama’s almond flour blend with this cake. It has been out of stock lately, so I use Pillsbury gluten-free which is a cup for cup flour. I use the Pillsbury for just about everything. I buy it at Walmart for less than $5 for a 2 LB bag. I hope you enjoy the cake! It’s one of my favorites.
