I was recently introduced to the Superfood Veggie Cakes by my friends at Garden Lites. I already was a fan of their muffins, so I was excited to try another one of their gluten-free products.

The Superfood Veggie Cakes are packed with nutrient-rich superfood veggies like kale, cauliflower, broccoli, carrots, zucchini, red peppers, and onions. These veggie cakes also include brown rice and eggs that perfectly compliment the variety of vegetables in the cake.
They are allergy-friendly being gluten-free, soy-free, peanut & tree nut free. They are also only 80 calories!
Lunch is the meal I struggle with the most, and now I have a new and delicious gluten-free option. The veggie cakes are frozen, and they heat up quickly in just 45 seconds in the microwave.
I really enjoyed the taste and texture of the veggie cakes. The veggie cakes have a really nice balance between the vegetables and rice. They are perfectly seasoned and would make a tasty breakfast, lunch, as a snack or a side dish.
