    An easy recipe for gluten-free cinnamon rolls. Swirls of cinnamon and sugar in a soft gluten-free roll topped with vanilla frosting. This gluten-free breakfast recipe also has a dairy-free option.

    Gluten-Free Cinnamon Rolls

    Making a gluten-free cinnamon rolls recipe was a big goal of mine. A good cinnamon roll recipe comes from a good yeast roll recipe. So, after I was happy with how my Gluten-Free Dinner Roll recipe turned out, I knew I could try adapting it to make gluten-free cinnamon rolls.

    I’m really excited to share this recipe for gluten-free cinnamon rolls with you! I have included lots the step-for-step recipe photos and baking tips to help you successfully make homemade gluten-free cinnamon rolls.

    How To Make Gluten-Free Cinnamon Rolls

    • Preheat your oven to 100°F (the bread proofing setting). Once it gets to 100°F, turn off your oven.
    • Crack two eggs into a small bowl and whisk. Allow the eggs to come to room temperature.
    • Add the granulated sugar into a large mixing bowl.
    • Warm the milk to 110°-115°F. I microwave the milk in a glass measuring cup for 1 minute. I also use a thermometer to check the temperature. If your milk is too hot, it will kill the yeast. Pour the warm milk over the granulated sugar and stir to combine. (photo 1)
    • Pour the instant yeast over the milk mixture and allow it to bubble up for a few minutes. (photo 2)
    • Melt the butter in a glass measuring cup or small glass bowl. Make sure the temperature of the butter is not over 115°F before you add it to the milk and yeast mixture.
    • Pour the whisked eggs and the apple cider vinegar into the milk mixture and mix until fully combined. I used the dough attachment to my KitchenAid stand-up mixer. (photo 3)
    • Add the gluten-free flour, baking powder, salt, xanthan gum (leave out if your flour already has it). Mix on medium speed (6 on KitchenAid) for 5 minutes. Scrape down the sides when needed. Your dough will start to pull away from the sides of the bowl. The dough will be tacky and soft. It should not completely stick all over your hands but should feel tacky and not dry and floury. Do not add more flour! (photo 4)
    • Place dough in a greased ovenproof bowl and cover with plastic wrap. (I use coconut oil cooking spray) Cover the bowl with a towel and place in your warm oven for 1 hour to rise. (photo 5 & 6)

    • During the last 10 minutes of the dough’s rising, make the filling. In a small bowl with a hand mixer, cream the softened butter, brown sugar, ground cinnamon, and pure vanilla extract together in a small bowl to make the filling. (photo 7)
    • Remove the dough from the oven and preheat the oven to 350° F. (photo 8)
    • Place the dough on top of a floured parchment paper and shape it into a rectangle. (photo 9)
    • Dust your rolling pin with gluten-free flour and roll out to about 1 inch thick. (photo 10)

    • Carefully smooth the cinnamon, butter, and brown sugar filling over the top of the dough. Leave ½ inches bare (filling-free) on one long edge. (photo 11)
    • Using the edge of the parchment paper, fold the edge up. Doing this will help you start your first layer in the rolling of the dough. Pull the parchment paper down slowly back to the counter. Now you have the start of your roll. (photo 12)
    • Slowly roll the dough to form a log shape. (photo 13)
    • Then cut the log into 12 equal rolls. (photo 14)
    • Place the rolls in a greased 9×13 baking dish. (I use a coconut oil spray)
    • Bake for 25-30 until they are light golden brown. Please watch your oven because all ovens are different.
    • Make either the vanilla frosting (thicker) or the vanilla icing (thinner).
    • Allow the cinnamon rolls to cool for a few minutes before frosting them or drizzle them with the icing. Enjoy!
    • Store in an air-tight container. Reheat in the oven or microwave (about 30 seconds).

    What Type Of Yeast Is Used In The Cinnamon Roll Recipe?

    Most yeast is gluten-free, but some kinds of yeast do contain gluten. The most common kinds of yeast used for baking, like baker’s yeast, active dry yeast, and instant yeast, are gluten-free.

    This recipe uses instant yeast or rapid-rise yeast. I used Fleshman’s Rapid Rise Yeast. It is important to use rapid yeast, make sure it fresh and not expired and is at room temperature.

    Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm milk because yeast is a live organism and thrives in a warm environment.

    Heat the milk just until it feels warm to the touch. Or use a thermometer to check the milk’s temperature. The ideal temperature for instant yeast is 100°–110°F. If the milk is any hotter than that, it could kill the yeast and your rolls will not rise.

    If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture.

    How To Proof Yeast

    • This is not a necessary step. This is only needed if your yeast is not new or fresh.
    • Add the honey to the warm milk and stir until it dissolves.
    • Add the yeast to the milk mixture and allow it to sit for 5 minutes until bubbly.

    I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.

    How Do You Make Cinnamon Rolls Rise?

    Cinnamon rolls rise the best in a warm location. I rise my cinnamon roll dough in my oven.

    My oven has a bread proofing mode. When the oven is set in bread proofing mode it is a 100°F.

    If you do not have a proofing mode on your oven you can set your oven to the lowest setting and turn it off once it reaches 100°F.

    I proof and I bake the cinnamon rolls on the middle rack. I never want the rolls to touch the top of the oven rack.

    Tips For Making The Best Gluten-Free Cinnamon Rolls

    • Make sure that the gluten-free flour blend you are using is recommended for yeast baking. Check the package or the brand’s website. When in doubt it is always best to use the brand of gluten-free flour that the recipe was created with. 
    • Make sure your instant/rapid yeast is fresh.
    • Do not overheat the milk or you could kill the yeast.
    • Make sure to rise the cinnamon rolls in a warm place. I rise my rolls in the oven set to 100°F.
    • Bake the cinnamon rolls on the middle rack.

    Gluten-Free Flour

    When working with yeast recipes it is really important that you use the right gluten-free all-purpose flour blend. Not all blends are made for yeast recipes.

    For example, King Arthur Measure For Measure states on the back of their bag that it is not recommended for yeast recipes. Bob’s Red Mill 1-to-1 gluten-free flour is also not recommended for yeast baking according to their website. 

    These gluten-free cinnamon rolls were made with Pillsbury gluten-free flour. It is a rice flour cup for cup blend. A cup-for-cup all-purpose gluten-free flour blend is one that already has the starches and xanthan gum.

    Most gluten-free all-purpose flour blends have starches and xanthan gum already in them. The xanthan gum helps replace the elasticity and texture of gluten.

    So make sure to check the ingredients of your gluten-free flour as not to add any extra xanthan gum to your flour if it already includes it. If you do, you will get gummy cinnamon rolls!

    I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.

    Pro Tip For Measuring Gluten-Free Flour

    First, it’s important to use a measuring cup made for dry ingredients (not a pyrex liquid measuring cup) to measure the flour. I always measure gluten-free flour with the “spoon & level” method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

    Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe.

    Gluten-Free And Dairy-Free Cinnamon Rolls

    I have also included a dairy-free option for the gluten-free cinnamon roll recipe. For the dairy-free version, I used Smart Balance butter and unsweetened almond milk.

    Most of my family is also dairy-free (me included), so I always try to have a dairy-free option to my recipes. So, now you too can enjoy gluten-free and dairy-free cinnamon rolls.

    I promise it is just as delicious made with dairy-free butter and dairy-free milk.

    Some of my favorite dairy-free alternatives that I like to bake with are unsweetened almond or coconut milk. I also like baking with Smart Balance butter.

    Gluten-Free Cinnamon Buns Topping

    I love both a thick vanilla frosting, like Pillsbury cinnamon rolls have, and a drizzle glaze like the Cinnabon cinnamon rolls have. I couldn’t decide on which was best, so I included a recipe for both!

    Ingredients

    • 1 cup milk, warmed to 110°-115°F. Dairy-free use unsweetened almond milk.
    • 1 packet rapid yeast/instant yeast There is 2 ¼ teaspoons an instant yeast packet.
    • ½ cup granulated sugar
    • ½ cup unsalted butter, melted and cooled Dairy-free use Smart Balance butter.
    • 2 large eggs, room temperature
    • 1 teaspoon apple cider vinegar
    • 3 ½ cups all-purpose gluten-free flour with xanthan gum I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose. Not all brands of gluten-free flours are recommended for yeast baking.
    • 2 teaspoons gluten-free baking powder
    • ¼ teaspoon salt

    Filling

    • ½ cup unsalted butter, softened Dairy-free use Smart Balance butter.
    • 1 cup brown sugar, packed
    • 1 ½ tablespoons ground cinnamon
    • ½ teaspoon pure vanilla extract

    Vanilla Frosting (thicker)

    • ½ cup unsalted butter Dairy-free use Smart Balance butter.
    • 3 cups powdered sugar
    • 1 tablespoon pure vanilla extract

    Vanilla Glaze (thinner)

    • 2 cups powdered sugar
    • 5 tablespoons milk Dairy-free use unsweetened almond milk.
    • 1 teaspoon pure vanilla extract

    Instructions

    • For the dairy-free option, I used unsweetened almond milk and Smart Balance butter.
    • The cinnamon rolls are best when eaten warm. If you have any leftovers store them in an air-tight container and reheat them before eating. You can reheat in either the oven or the microwave (about 30 seconds).

      Amazing! I made these on Christmas morning and it’s now a part of our Christmas traditions. I was wondering if it’s possible to premake the dough? If so, how would I store it if I made it the day before?

      I made these awesome cinnamon rolls…. easy to make if you have the time and turned out AMAZING!!!!!!!!!!!!!!!!! I made a half batch because I was almost out of flour. It made 9, but I made them a bit smaller. Out of me and 3 other people, they were gone in 2 days! I had to control myself not to eat the whole pan. Even my non GF dad enjoyed them. About to make another batch…. haha! I had to make these in a convection oven, because out normal oven was broken. I couldn’t put the dough in the oven to rise, so I stuck it in the fridge. I also had to use Pizza crust yeast, because I didn’t realize we were out of normal. It obviously turned out fine! I used Cup4Cup all purpouse flour. Thanks for the awesome recipe!

      Oh. Oh these are very dangerous. The texture, the taste… it’s 100% perfect. This was my first ever attempt at making cinnamon rolls. The directions were very easy to follow and the finished product looked exactly like yours. I can’t thank you enough for sharing this recipe with everyone!

      We used the America’s Test Kitchen All-Purpose Gluten Free Flour blend for cinnamon rolls. Based off of some quick math, I used about 17 oz of the ATK blend to match the weight of Pillsbury’s GF flour. It worked perfectly. The rolls were fluffy and delicious and it’s taking a lot of willpower to not go into the kitchen to snack on another roll.

      Soooo good. I’ve tried and failed so many times to get gf dough recipes to rise and this did the trick. So yummy and easily modified to dairy free. Is there a way to make the dough the night before and cook in am?

        These were delish! Made on Christmas Eve and kept the unbaked rolls in the fridge overnight. Woke up and let them come to room temp for an hour and then baked. They tasted like amazing cinnamon cakes, less fluffy or flaky than traditional rolls, but sooo good. I think I might prefer them because every piece tasted like the coveted center of the roll.Our gluten-free gal said they were “everything I needed.” Would recommend. *I used krusteaz gluten free flour and earth balance butter*

      You did it again Mama! I’ve been trying various gluten free cinnamon roll recipes since the pandemic ramped up and we went into quarantine. I also bake without eggs, so with the recipes I try, the turnout can be hit or miss. This one was the best out of six. I used rice milk, Country Crock plant butter, and sparkling water in place of eggs (1/4 c per egg). Better Batter is my preferred gf flour for cinnamon rolls. The whole family, even the gluten eaters enjoyed these. They are wonderful.

      I’ve made these several times for my mother-in-law and she absolutely loves them (so do the non celiac people that try them). The only thing I do differently is use dairy version of the milk and butter as that’s what I have on hand most of time. Thank you so much for sharing this recipe!

      Cinnamon rolls are my absolute favorite but I gave up on them after going GF. A year ago a local coffee shop had a delicious GF cinnamon rolls, but it was more dense than a traditional one. I started wondering if you could use yeast with GF flour and this recipe came up in my search. I was hesitant to try, but I am SO glad I did. These are ABSOLUTELY delicious. And I love that it makes such a big batch! Thank you for sharing this with us so that all of our GF cinnamon roll dreams can come true.

      Omg. These turned out SO well. This recipe is definitely a keeper 🙂 I’ve already shared it with my sister, who’s also a Celiac. And she’s shared it with her mother in law (her BIL is also a Celiac). I used the Namaste GF perfect flour blend. The texture was identical to any non-gf homemade cinnamon roll I’ve eaten. Thank you for another awesome recipe!! This is the second of yours I’ve tried. I made your biscuit recipe last weekend for gf biscuits and gravy and they were a hit!!

      Everyone in my family loved these, even the ones that aren’t gluten-free Our only challenge was the cinnamon sugar caramelized on the bottom to make a hard candy crust so I think I will cook them on a higher rack next time.

      My oven only goes as low as 170°… Is there an alternate to the first step pic using the oven at 100°?

        Hi! You can turn your oven to the lowest degree that it will get to and once it gets there just turn your oven off. Some people allow their cinnamon rolls to rise covered ontop of their warm oven. I have not tried that because my oven is in the wall. I hope you enjoy the cinnamon rolls!

      I made these for Mother’s day and they were incredible! Best cinnamon rolls I’ve ever had. They were also pretty easy to make, which was appreciated since I am not an experienced baker. I used dry active yeast instead of the instant yeast, and I also used Bob’s Red Mill All Purpose Gluten Free flour since that’s what we had on hand, and it still turned out really well. Definitely will make again!

      I obviously did something wrong because my dough never properly rose. So it was a bit of a mess but my wife convinced me to keep moving forward. What I ended up with was an amazing monkey bread! I will remake and double check all my measurements but this is a great recipe even if you mess it up.

      SO DELICIOUS!!! The first time I made these I did not measure the temp of my butter or milk and they ended up wayy too sticky. Just tried it again with measuring temps and they came out PERFECT!!!

      I decided today was the day I was going to conquer gluten free cinnamon rolls. I had tried it numerous times before and failed. I browsed through the ingredients and recipe and thought heck why not try again! So glad I did. Making sure the temp of the butter and milk is just right, I think is the thing that did the trick! I did make my own cream cheese frosting to go on top! So good. Thank you so much for sharing your recipe. My husband (who is gluten free) was the real taste tester and they were approved!!       Amazing recipe! Only thing is the dough was very sticky so had to add in quite a bit more flour and even then it was still really sticky and wouldn’t roll. But they tasted delicious!!

      These turned out AMAZING! I was a huge baker before my celiac diagnosis over a year ago. My favorite thing to bake was cinnamon rolls so I was very intimidated to try them gluten free. I researched recipies for hours and decided to use yours. They turned out perfect! I used my old recipie for a cream cheese frosting and they turned out so yummy. My husband, brothers, and sister in law would have had no idea they were gluten free if they didn’t already know they were!! The only comment I got was “they are a little more dense than normal ones.” Other than that, they all loved them. This is a recipie I’m saving for sure!

      This was my first time baking any bread-type recipe and they were AMAZING.
      Due to the stores being ravaged, I could only find live active yeast (the moist kind for cakes), I used one cube of that, and I used bob’s 1:1 flour. The dough was pretty sticky but rose very well and rolled our very nicely. I ended up making a cream cheese frosting for the top.
      I was pretty nervous when they came out of the oven but HOLY COW they were the best GF cinnamon rolls I’ve ever had!! My fiance was very impressed!
      I put them in the fridge over night, due to the cream cheese in the frosting, and they reheated very well this morning!
      Thank you so much for an amazing recipe! It was complex (to a newbie) but the added notes and directions made it all very easy!

      I have searched for years for a cinnamon roll that was safe to eat. None ever, even came close. The first bite I had of these, was like a dream! Not joking they were delicious! I replaced all butter with refined coconut oil, and milk with oat milk. I even halfed the reciepe and they were still perfect! Thank you!! Delicious!

      We are also DF, so I subbed unsweetened almond milk for the milk and used 1/2 butter flavored crisco and 1/2 Smart balance light for the dough. Then I used less Smart balance light than called for in the filling. The recipe turned out perfectly. The kids loved them. Super rich, so be warned 😉 12 rolls filled my glass baking dish and looked at good as it tasted. One last comment was the middle of dough for me was almost more biscuit in texture than roll. I think my flour blend might need a tad bean flour for this recipe to create more of a ‘chew’ to the texture.

      This was my first attempt at making gfree cinnamon rolls. I used Bob’s 1-to-1 flour. Overall, we’re quite pleased! They rose nicely compared to most recipes I’ve seen (I appreciated your attention to ensuring none of the ingredients killed the yeast), they were fluffy inside (yay for not being dense), and they had a lovely flavor. On the flip side, the dough was very sticky (I had a hard time rolling/shaping it despite coating my surface w/ parchment paper and flour) and the final result was a bit dry/crumbly on the outside (perhaps I over-baked it). Any tips? Also – would you make any changes for high altitude? Thanks again!

The dough was sticky because Bob’s 1to1 flour doe snot absorb liquid the same as the Pillsbury gluten-free flour becue of the sorghum flour in it. You could try adding an additional 1/4 cup of flour to the dough. You will need to adjust the rice for high altitude baking, but it does depend on what altitude you are at.       After staring at cinnamon rolls for 2 days straight on Instagram i decided to find a recipe to make my own. I used President’s Choice gluten free flour because I dont have access to other ones in Canada.

      These were quite delicious and am looking forward to putting some in the freezer to reheat for breakfasts

      Delicious! Wouldn’t have known they were gluten free if I didn’t make them myself! Used Cup 4 Cup flour and substituted 1/2 of that flour for almond flour. I made them the night before and put in fridge. Set out for 1 hour before baking! I made a cream cheese frosting too! My two celiacs(GF) were in heaven! Thanks for the recipe!

      I made these dairy free for a party today and EVERYONE raved about them. NO ONE would have even known they were gluten free and dairy free; if I hadn’t mentioned it.

      I wanted to mention that I made the cinnamon rolls last night, laid them out in the baking dish, covered with plastic wrap and refrigerated overnight. This morning I brought them to room temperature and then baked them in the oven. They turned out great! So you can absolutely make them ahead of time. I will be making these again. Thanks so much for this great recipe. Also, I wanted to note that I used the Bob’s Red Mill 1 to 1 gluten free flour and it worked quite well.

Since it’s just the two of us…making large dinners…with lots of leftovers, doesn’t make sense for us right now, and lots of restaurants, this year, seem to be closed for Thanksgiving…and, my Doctors have strongly advised me… to go gluten-free.       These are incredible. I was a little nervous because gluten free dough can be so blah and difficult to work with but they honestly turned out so delicious.
      I am also allergic to eggs so I swapped for two flax eggs instead. Seemed to work just fine and the result was still soft doughy insides with nicely browned tops.
      I used Bob’s Red Mill 1 to 1 Baking flour for anyone in need of another GF flour option.
      Will definitely be making these again thank you!

      Thank you sooo much for this recipe.I have always been looking for a nice cinnamon buns recipe and this one is AMAZING! Most recipes i have done before weren’t really nice, and I gave up trying making them. But somehow I thought I gonna give it a last try!!! Worth it !
      At first, when I made the dough i wasn’t sure if they gonna turn out nice, but as soon as they been taken out of the oven… Yummmmmmmyyy

      Absolutely delicious!!! I’m an experienced baker but since going gluten free about two years ago I was so intimidated to try my hand at making cinnamon rolls. A lot of recipes call for so many different flours and starches, but as soon as I saw this just called for a blend (and Pillsbury! My favorite gf blend!) I knew it was time. So happy I finally made them. Ate about half the pan in one sitting ???? Thank you Audrey for this fantastic recipe!!!

      Can these be made the night before, cut and put into the pan and refrigerated until time to bake the next morning? I have had such a hard time with cinnamon rolls. Finally I made your Cinnamon Roll Cake instead. It was great, but would like to make “Cinnamon Rolls” for my celiac granddaughter, because that was always her favorite.         Hi Bonnie! I have never tried to make them up ahead of time. I have seen where other recipes for cinnamon rolls you can refrigerate and then leave them out to rise somewhere warm (1-1/2 hours) and then you bake them according to recipe instructions. I have not tried this, so I cannot guarantee the results. I am super happy that you enjoyed the cinnamon roll cake! If you try and make them ahead of time will you please let me know how they turn out?
