Gluten-Free Pizza Bites {Dairy-Free Option}

Gluten-free deep dish pizza bites are super easy to make. Perfect for lunch, a quick and easy dinner, as a snack or an appetizer. The recipe also has a dairy-free option.

Gluten-Free Pizza Bites

Who does not love pizza? Seriously,  I love pizza!  It’s the one thing I miss the most since going gluten-free.

I’ve made gluten-free pizza crusts over the years, bought pre-made pizza crusts and bought frozen gluten-free pizza. See, I am not ready to give up on my love affair with pizza just because I’m gluten-free.

When I need to get my pizza fix and want an easy and quick recipe, I make my deep dish pizza bites. All the flavor of pizza without all of the work!

Gluten-Free Pizza Bites In A Few Easy Steps

  1. Preheat oven to 425° F. This gluten-free pizza dough is super easy to make. In a medium bowl beat the two eggs. Add the garlic, basil, and oregano to the eggs and stir until fully combined. Add the gluten-free Bisquick, water, and olive oil. Mix until fully combined. The dough will not be thick, it will be more like cake batter. (photo 1)
  2. Spray a regular sized muffin pan with cooking spray. Add 3/4 of the crust batter to the muffin pans. I like to use an ice cream scoop. (photo 2)
  3. Sprinkle mozzarella cheese over the top of the crust batter. (photo 3)
  4. Spoon pizza/spaghetti sauce over the mozzarella cheese (or dairy-free cheese). (photo 4)
  5. Add another layer of mozzarella cheese over the sauce and top with your favorite pizza topping(s) (optional). (photo 5)
  6. Bake for 15 minutes at  425° F. Please watch your pizza bites because all ovens are different.
  7. Allow to cool for 1-2 minutes before removing from pan and enjoy! (photo 6)
  8. Store leftovers in an air-tight container. Reheat in the microwave or oven.

Gluten-Free Bisquick

This recipe is super simple using one of my favorite products – gluten-free Bisquick. If you don’t have gluten-free Bisquick you can use this recipe to make your own.

Dairy-Free Pizza

These pizza bites are super easy to make dairy-free. Just use your favorite brand of dairy-free shredded cheese. The gluten-free pizza dough in this recipe is already naturally dairy-free. So you can also have gluten-free and dairy-free pizza bites.

My husband, youngest son and I are all dairy-free as well so we have tried a lot of brands of dairy-free cheese. We have used Trader Joes, Daiya, Follow Your Heart, Violife and Parmela Creamery.

The batter for the crust is easily whipped up and baked in a muffin pan. Top with your favorite pizza toppings and in a quick 12 minutes, you will have bubbly deep dish pizza bites.

These would be perfect for school lunches, a quick and easy dinner, an after-school snack or for your next party.

Gluten-Free Pizza Bites

Gluten-free deep dish pizza bites are super easy to make. Perfect for lunch, a quick and easy dinner, as a snack or an appetizer. The recipe also has a dairy-free option.

Ingredients 

  • 1 1/3 cups Bisquick Gluten Free mix, (or make your own with the recipe linked below in the recipe notes)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 cup water
  • 1/3 cup olive oil
  • 2 eggs, , beaten
  • cooking spray, (I like olive oil cooking spray)
  • shredded mozzarella cheese, , or dairy-free shredded cheese
  • gluten-free pizza or spaghetti sauce, (I like Prego)
  • favorite pizza toppings, , optional

Instructions 

  • Preheat oven to 425° F.
  • In a medium bowl beat the two eggs.
  • Add the garlic, basil and oregano to the eggs and stir until fully combined.
  • Add the gluten-free Bisquick, water, and olive oil. Mix until fully combined. The dough will not be thick, it's more like cake batter.
  • Spray a regular sized muffin pan with cooking spray.
  • Fill each tin 3/4 full with the crust batter. I like to use a greased ice cream scoop.
  • Sprinkle mozzarella cheese over the top of the crust batter.
  • Spoon pizza/spaghetti sauce over the mozzarella cheese.
  • Add another layer of mozzarella cheese over the sauce.
  • Top with your favorite pizza topping(s) (optional)
  • Bake for 15 minutes.
  • Allow to cool for 1-2 minutes before removing from pan. Enjoy! Store leftovers in an air-tight container. Reheat in the microwave or oven. 

Notes

  • If you don't have gluten-free Bisquick you can use this recipe to make your own.
  • For dairy-free, use dairy-free shredded cheese.
  • Store leftovers in an air-tight container. Reheat in the microwave or oven.

  1. We are dairy free and gluten free and I’ve really missed pizza that the crust wasn’t rock hard. It reminds me of deep dish pizza, which was my fav! These are SOOOOO good! We will be making them regularly! Thanks for sharing!

  2. Just wanting to say for anyone who also needs egg free the egg replacer from bobs red mill works. BUT with extra water oil till batter is no longer thick mine ended up thick like a biscuit batter. Sorry I didn’t measure but once I saw the batter was suppose to be more cake like as she stated in recipe. I winged it and it worked out awesome, used a tin pan over silicone since I tend to have issues when things have to be gluten free, dairy free, Egg free lol baking can be touchy in silicone atleast for me. Also used the store bought gf Bisquick.

  3. This recipe is excellent. It is such an improvement from the original gluten free Bisquik pizza recipe. No need to pre bake like the Bisquik recipe states. Thanks so much for modifying a good recipe and making it so much better. And I think this would work as a recipe for gf dinner rolls. Just leave out the garlic powder and dried basil. Quick and easy on any week night.

    1. Hi Jennifer! I have not tried this recipe in a mini muffin tin. If you try it will you please let me know how it turns out? Th mini pizza bites will need to bake for a less amount of time, so please keep a watch on them.☺️

    2. Yep, it works in mini muffin tins. I have made them this way and they make fantastic little appetizers! The bake time is less of course, but otherwise they are made and baked just the same. 🙂

  4. Adult son recently dx with celiac after years of suffering. He said he enjoyed these very much as a tasty snack and they stored and reheated very well. (I just picked up your cookbook for him as a gift utilizing the Amazon Prime deal )

    1. Hi Ray! You keep filling the muffin tins up with batter and leave a 1/4-inch space at the tops. So the muffin tins are not filled up all the way. the dough needs a little space to rise. I hope you enjoy them!

  5. I made the pizza bites today for lunch. So delicious! I have a 22 month old who is high gluten sensitivity. I made them in regular muffins dish and then in the mini ones for him. They were perfect!

    1. In my silicone muffin pan, these do well at 400* x23 mins. Also, the second time I made them, I was out of spaghetti sauce so I used rotel tomatoes (drained) instead and the family liked them even better 😆

  10. I am not sure about gluten free foods but am doing keto so thought I’d give these a try. Ohhhhh!!! They are so good, I used a silicone muffin pan and it was a larger sized muffin only made 6 but 6 of the most delishes pizza muffins. I am going to try making my own Bisquick as it is a bit costly to buy. Thank you so much for this yummy recipe. Thinking it would be good for church dinners

  11. I loved your recipe. I made up your homemade bisquick using the ATK flour blend, a white rice flour blend and the Crisco shortning. I use a small food processor to mix the flour and shortning. I followed your recipe with the exception of no tomato sauce was used, I wanted to make them into muffins. I used a silicone muffin tray on top of a cookie sheet. Nothing sticks to silicone. The underneath part touching the silicone was a bit soft. Next time I will take them out of the silicone right away. I think next time I will reduce the oil to 1/4 cup.

    1. Hi Tricia! The pizza bites would be perfect for school lunches. They can be eaten cold or heated up just like regular pizza. My kids love them!

  15. Hi there. for the crust, did you use the Betty Crocker Bisquick Gluten Free Pizza Crust recipe and then used that here? or just the gluten free Bisquick?

    1. Hi Kaitlyn! I used the gluten-free Bisquick for this recipe. If you don’t have it, I included a link to make your own gluten-free Bisquick. I have not tried their pizza crust mix.

    1. Yes they should freeze well. I have never had a problem with anything I make with gluten-free Bisquick not freezing well.
