Blueberry Oatmeal Cookies {Gluten-Free, Dairy-Free, No Refined Sugar}

Tasty gluten-free and dairy-free blueberry oatmeal cookies. Soft and chewy with just the perfect balance of oats and cookie. A healthier cookie with sweet blueberries and no refined sugar.

  • 2 cups of gluten-free flour I like Enjoy Life All-Purpose Flour
  • 1/4   teaspoons  of xanthan gum omit if your blend has it already
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 tablespoon of cinnamon
  • 1/8 teaspoon of ground ginger. it helps in keeping gluten-free baking fresher longer
  • teaspoons of lemon peel optional
  • 3 cups of certified gluten-free oats
  • 1/2 cup of pure maple syrup
  • 2 eggs room temperature
  • 1 tablespoon  of pure vanilla extract
  • 1/2 cup of applesauce  I used no sugar added
  • 1 cup of dried blueberries raisins or chocolate chips


  • Preheat oven to 325 degrees.
  • Combine all of the dry ingredients in a large bowl.
  • Add the maple syrup, eggs, applesauce and vanilla to the dry mixture. Use your mixer on low speed to combine all of the ingredients.
  • Add the blueberries to the cookie dough and gently mix until fully combined.
  • Refrigerate the cookie dough for 10 minutes.
  • The dough will be very thick. Using a cookie scoop or tablespoon to form a small cookie ball.
  • Place cookie balls on a parchment lined cookie sheet. (or greased with cooking spray)
  • Flatten cookie balls into a cookie shape. These cookies will not flatten by themselves.
  • Bake for 12-15 minutes. Please watch your cookies because every oven is different.
  • The cookies will be soft to the touch.
  • Try and let them cool before you have one.
  • Enjoy!
