Gluten-Free Pancake Bites Three Ways

Gluten-Free pancake bites are super easy and a super tasty way to start your day. Perfect for a grab and go breakfast and these little beauties are also freezer friendly. Gluten-free mini pancake muffins made three ways: blueberry pancakes, chocolate chip pancakes and cinnamon roll pancakes.

Ingredients

  • 1 1/4 cup all-purpose gluten-free flour I like Pillsbury Gluten Free
  • 1 teaspoon of xanthan gum leave out if your flour already has it in it
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons pure maple syrup
  • 1 tablespoon  of pure vanilla extract
  • 1 egg
  • 1 cup milk for dairy-free used cashew, almond or coconut milk
  • 1/4 cup vegetable oil I like coconut oil
  • cooking spray I like coconut oil spray

Toppings

  • 1 cup of mini chocolate chips I like Enjoy Life Foods or
  • 1 cup of dried or fresh blueberries or
  • 2 tablespoons of brown sugar 2 teaspoons of ground cinnamon (mix together in a small bowl)
  • You can use only one topping at a time or all three. If you use all three just use 1/4-1/2 cup per topping.

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray mini muffin pans with cooking spray.
  3. In a medium bowl whisk the egg and add the oil, milk, maple syrup, and pure vanilla extract and stir to combine all of the ingredients.
  4. Add the gluten-free flour, salt, baking soda, baking powder, xanthan gum (leave out if your flour has it already in it) in a medium bowl and stir to combine.
  5. Add the dry ingredients to the wet ingredients and stir to combine.
  6. Spoon the pancake batter into the mini muffin pan (about 3/4 full).
  7. Top with either mini chocolate chips, blueberries, or cinnamon and brown sugar mixture.
  8. Bake for 12 minutes.
  9. Allow to cool a little before you remove them from the pan.
  10. Enjoy!
