Line a baking sheet with parchment paper.
Spread 12 crackers with peanut butter and 12 crackers with marshmallow fluff.
Place the marshmallow covered crackers on top of the peanut butter covered crackers to make a cracker sandwich.
Melt the gluten-free chocolate flavored candy melts in microwave safe bowl according to the package directions.
Or melt 2 cups of gluten-free chocolate chips and 1 tablespoon of vegetable oil in a microwave safe bowl in 30-second intervals, stirring in between, until completely melted.
Place the cracker sandwich in the melted chocolate and flip over with a fork to cover the entire sandwich with chocolate.
Remove the cookie from the bowl by sliding the fork underneath the cookie and lifting out of the bowl and place on a parchment paper-lined baking sheet. Top the cookie with gluten-free sprinkles. Repeat until all the cracker sandwiches are covered with chocolate.
