Gluten-Free Pumpkin Peanut Butter Balls
Super cute and easy gluten-free peanut butter balls are a sweet treat perfect for the fall holidays.

Ingredients

gluten-free peanut butter
1/2

butter
melted (dairy-free use Smart Balance or Earth Balance butter)
3
cups
powdered sugar
1
tablespoon
pumpkin pie spice
1
tablespoon
pure vanilla extract
gluten-free red and yellow gluten-free food coloring
gluten-free pretzel sticks

Instructions
In a large bowl combine peanut butter, melted butter, pumpkin pie spice and vanilla mix until fully combined with your stand up mixer or hand mixer.
Add several drops of the red and yellow food coloring and mix until you get the orange color you want.
Add the powdered sugar and mix until fully combined.
Scoop out a heaping tablespoon of the peanut butter mixture and form into a ball. (I use my cookie scoop.)
Using a toothpick create the dents in the pumpkins.
Inserts a piece of the gluten-free pretzel in the center to be the pumpkin's stem.
Place on parchment lined cookie sheet, either refrigerate or freeze. (I prefer them to be frozen.)
