Gluten-Free Flour
All of my gluten-free apple recipes were developed with Pillsbury gluten-free flour. It is an all-purpose cup for cup rice flour blend.
A cup for cup or 1 for 1 gluten-free flour includes starches and xanthan gum. Xanthan gum is important to gluten-free baking because it mimics the elasticity of traditional wheat flour.
So make sure to check the ingredients of your gluten-free flour so as not to add any extra xanthan gum to your flour if it already includes it. If you do, you will get gummy baked goods!
I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different results depending on the gluten-free flour blend you choose.

Tip For Measuring Gluten-Free Flour
The best way to measure gluten-free flour is the “spoon & level” method. Do not scoop the flour directly out of the bag with your measuring cup or you could get more flour than the recipe calls for.
It is super important to use a measuring cup made for dry ingredients (not a pyrex liquid measuring cup) to measure gluten-free flour. Use a spoon to scoop the flour into the measuring cup. After you have spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.
Dairy-Free Baking
For the dairy-free options to my recipes I use Smart Balance butter and unsweetened almond milk.
Vegan Baking
For the vegan options to my recipes I use Bob’s Red Mill egg replacer, Smart Balance butter and unsweetened almond milk.
