An easy recipe for gluten-free blondies. A sweet vanilla and brown sugar-flavored dessert bar. This gluten-free dessert recipe also has a dairy-free option.

Gluten-Free Blondies

This gluten-free blondies recipe is the vanilla-flavored version of my popular Gluten-Free Brownie recipe. Blondies are made with only a few simple ingredients and are also baked in a short amount of time.

These blondies are customizable as well. The blondies taste a lot like the base for a chocolate chip cookie.

They are sweet with the flavors of brown sugar, vanilla, and butter. I like my blondies just as they are, but my kids love it when I add chocolate chips.

What Is The Difference Between Blondies and Brownies?

Blondies are the vanilla version of brownies. Blondies are a dessert bar that has a buttery, brown sugar, and vanilla flavor.

Just like brownies, you can add your favorite mixins to the blondie batter. Chocolate chips, butterscotch chips, and chopped nuts are popular mixins to add to blondies.

    • Preheat oven to 350ºF.
    • Spray the 8 x 8-inch square baking pan with gluten-free non-stick cooking spray or line the baking pan with parchment paper and coat the bottom and sides with gluten-free nonstick cooking spray or butter.
    • In a large bowl, add the eggs, granulated sugar, brown sugar, pure vanilla extract, and melted butter mixing until fully combined. (photo 1)
    • Add the gluten-free all-purpose flour with xanthan gum, baking soda, and salt to the butter mixture and mix until fully combined. (photo 2)
    • Pour the blondies batter into the greased 8 x 8-inch sized baking pan. Smooth the top of the batter if needed. (photo 3)
    • Bake for 30-35 minutes or until a toothpick inserted into the center comes out just barely clean. The sides of the blondies will start to pull away from the pan and brown. Please watch your blondies because all ovens are different.
    • Allow the blondies to cool completely before cutting. Enjoy! (photo 4)
    • Store leftovers in an air-tight container.

Tips For Making The Best Gluten-Free Blondies

      • Always grease your baking pan. I use gluten-free coconut oil cooking spray.
      • Do not over-mix the batter. You will have softer blondies.
      • The center of the blondies will not be as done as the edges when they are done baking. (see the photo below)
      • Do not over-bake the blondies or they will be very hard.
      • You can add chocolate chips, chopped nuts, or even swirl peanut butter on the top of the blondie batter before baking.
      • Allow the blondies to cool before cutting them. The bottom of the baking dish should be just warm to the touch.
      • I like baking blondies in a glass 8 × 8-inch baking dish.

Can You Freeze Blondies?

The blondies can be frozen for up 3 months. Wrap the completely cooled blondies in plastic wrap or foil, and then place in a plastic freezer bag. Defrost the blondies at room temperature.

Gluten-Free Flour

These gluten-free blondies were made with a rice flour cup-for-cup blend. A cup-for-cup, all-purpose gluten-free flour blend is one that already has starches and xanthan gum.

Most gluten-free all-purpose flour blends have starches and xanthan gum already included. The xanthan gum helps replace the elasticity and texture of gluten.

So make sure to check the ingredients of your gluten-free flour and not add any extra xanthan gum to your flour if it is already included. If you do, you will get gummy blondies!

Pro Tip For Measuring Gluten-Free Flour

The best way to measure gluten-free flour is the “spoon & level” method. Using a spoon, scoop the flour into the measuring cup.  After you’ve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.

Please do not scoop the flour out of the bag with your measuring cup. If you do you could get more flour than the recipe calls for. Also, use a dry ingredient measuring cup and not a glass measuring cup for liquids. 

Dairy-Free Baking

I have also included a dairy-free option for the blondie recipe. I used Smart Balance butter for the dairy-free option.

Most of my family (including me) are also dairy-free as well. So I always try and have a dairy-free option for all of my recipes. Now, you too can enjoy a gluten-free and dairy-free blondie.

Some of my favorite dairy-free alternatives that I like to bake with are unsweetened almond or coconut milk. I also like baking with coconut oil or Smart Balance butter.

Easy Gluten-Free Blondies

One of the easiest gluten-free desserts to make is blondies. It only takes a few minutes to make the blondie batter and they only bake for 30-35 minutes.

These gluten-free dessert bars can easily be made ahead of time or frozen for later. Unlike a lot of gluten-free baked goods, blondies are super soft and do not dry out quickly.

Gluten-Free Blondies {Dairy-Free Option}

Ingredients 

  • 2 large eggs
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted, Dairy-free use Smart Balance Butter.
  • 1 tablespoon pure vanilla extract
  • 1 1/4 cup all-purpose gluten-free flour with xanthan gum, I like Pillsbury gluten-free. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions 

  • Preheat oven to 350ºF.
  • Spray the 8 x 8-inch square baking pan with gluten-free non-stick cooking spray or line the baking pan with parchment paper and coat the bottom and sides with gluten-free nonstick cooking spray or butter.

  1. I love this recipe I just can’t figure out why my blondes are sunk in the middle? The center of my 8x8in pan is significantly lower than the rest the pan like it’s not even rising in the middle. Is there some trick I need to know to avoid this or is this normal? Thank you!

    1. Hi Deanna, blondies tend to puff up as they bake, then sink a bit in the middle as they cool. We always recommend baking in a metal pan, as ceramic and glass pans do not heat as evenly and are more prone to having an underbaked middle.
