Breakfast sausage and shredded cheese are both naturally high in sodium, so taste before adding extra salt to the eggs, especially if your sausage is well seasoned already.
Store-bought gluten-free tortillas save time but are more prone to cracking than a homemade version. Warming them longer usually solves it.
