Gluten-free tortillas are also more delicate than flour ones, and a cold, stiff one cracks the second you fold it. Warm them first, in a dry skillet or a damp towel in the microwave, so they roll tight without splitting. You’ll know the filling’s ready when the eggs look glossy and just set, the sausage is deeply browned, and the cheese starts to soften. That’s your cue to roll.

What I Learned While Testing

  • Don’t skip warming the tortillas. I know it’s tempting to skip this step when you’re in a hurry, but a cold gluten-free tortilla cracks almost every time you fold it. Thirty seconds per side in a dry skillet is all it takes, and it’s the difference between a burrito that rolls up tight and one that falls apart in your hands.
  • Pull the eggs off the heat while they still look slightly underdone. Eggs keep cooking from residual heat even after you take them off the stove, so if you wait until they look fully set in the pan, they’ll be overcooked and rubbery by the time you fill your burritos.
