This makes it especially reliable for cakes, cookies, and bars because it provides structure and softness without needing additional binders.

    Why: This blend is well-balanced and slightly lighter in texture
    Expect: Soft, tender baked goods with a slightly more delicate crumb

How to Measure Gluten-Free Flour

For the most accurate results, always measure gluten-free flour using the spoon and level method. I like to use a dry measuring cup, not a liquid measuring cup, to keep everything consistent.

Spoon the flour into your measuring cup, then level it off with the back of a knife. Avoid scooping directly from the bag, since that can pack in too much flour and lead to dry or dense desserts.

Ingredient Substitutions

Many of these recipes can easily be made dairy-free with simple swaps. I’ve tested several of them using dairy-free alternatives, and they still turn out great.

For milk, you can use unsweetened almond milk or unsweetened coconut milk. For butter, a dairy-free or vegan butter works well. I like using Smart Balance for a similar flavor and texture.
