I’ll admit, I’m a sucker for old-school lunches and recreating them at home. Sloppy joes are an all-time favorite, but who knows what was actually in the original version. These gluten-free sloppy joes have all the same classic flavors piled onto gluten-free hamburger buns. I used ketchup, tomato sauce, Worcestershire, and mustard to get the sauce just right.  Of course, onions, green pepper, and garlic build that classic savory base and add so much flavor. The balance of a little sweetness, a little tang, and just enough richness from the beef really hits that nostalgic flavor. Everything comes together in one skillet in about 20 minutes, so it’s easy cleanup and a great weeknight dinner.

Gluten-Free Baking Tips

  • Let it simmer until thick and glossy. The sauce needs a few minutes to reduce and come together. It should look thick, rich, and slightly glossy, not watery. If it still looks loose, let it cook a bit longer, stirring occasionally.
  • Use slightly higher-fat ground beef for better flavor. An 80/20 blend gives you a richer, more classic sloppy joe flavor and keeps the meat tender instead of dry. If you’re using lean beef, you may need a splash of liquid to keep it saucy.
  • Taste and adjust before serving. The balance of sweet, tangy, and savory is key. Add a little more mustard or Worcestershire for brightness, or a pinch of brown sugar if it needs more sweetness.
  • Fully soften the vegetables first. Cooking the onion and bell pepper until soft and lightly golden builds a deeper flavor base and ensures you don’t end up with any unwanted crunch in the final mixture.

Ingredients 

  • 1 tbsp olive oil
  • ½ cup green bell pepper, finely diced (½ of a large green bell)
  • ½ cup onion, finely chopped
  • 1 lb. ground beef
  • 3 garlic cloves, minced
  • 2 tsp brown sugar
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup ketchup
  • 1 can tomato sauce, (8 oz)
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 6 gluten-free hamburger buns

Instructions 

  • In a skillet over medium heat, add the oil. Add the onion and green pepper and cook until softened and lightly golden.
  • Add the garlic and stir to combine. Add the beef and cook until no longer pink.
  • Stir in the brown sugar, smoked paprika, salt, and pepper.
  • Stir in the tomato sauce, ketchup, Worcestershire sauce, and mustard.
  • Bring to a boil. Reduce the heat and simmer for 10 minutes until thickened, stirring occasionally.
  • Serve hot on warmed gluten-free buns and your favorite accompaniments.

Notes

  • Swap the ground beef for ground turkey or chicken for a lighter option that still stays flavorful.
  • Add a pinch of red pepper flakes if you want a little heat without overpowering the sauce.
  • Use red bell pepper instead of green for a slightly sweeter, milder flavor.

Gather all the ingredients together.

Sauté the vegetables: Heat 1 tbsp olive oil in a large skillet over medium heat until it shimmers. Add ½ cup (71g) finely diced green bell pepper and ½ cup (71g) finely chopped onion, then cook for 4–5 minutes, stirring occasionally, until softened and lightly golden. The vegetables should look glossy and tender, not browned too quickly. Add 3 minced garlic cloves and cook for about 30 seconds, stirring constantly, until fragrant.

Brown the beef: Add 1 lb (454g) ground beef and cook, breaking it apart with a spoon, until fully browned and no longer pink. Continue cooking until any excess moisture evaporates and the beef starts to lightly brown.

Season the mixture: Stir in 2 tsp (9g) brown sugar, ½ tsp smoked paprika, ½ tsp salt, and ¼ tsp black pepper, mixing well so the seasoning evenly coats the meat.

Add the sauce ingredients: Pour in ½ cup (120ml) ketchup, 1 (8-oz/226g) can tomato sauce, 1 tbsp (15ml) Worcestershire sauce, and 1 tsp (5ml) yellow mustard. Stir until fully combined and the mixture looks smooth and saucy.

Simmer until thickened: Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the sauce thickens and becomes rich and slightly glossy. If it still looks thin, let it simmer a few more minutes.
