An easy recipe for corned beef and cabbage cooked in an Instant Pot. This pressure cooker dinner recipe is both gluten-free and dairy-free.
Instant Pot Corned Beef and Cabbage
Every St. Patrick’s Day I make corned beef and cabbage for my family. For years I made the corned beef brisket in a slow cooker until I got an Instant Pot!
Cooking corned beef in a pressure cooker not only saves time, but it always comes out tender and juicy! You can see just how easy it is to make Instant Pot corned beef and cabbage in the recipe video.
How To Make Instant Pot Corned Beef and Cabbage

Place the metal trivet inside of the Instant Pot. Add the sliced onion, minced garlic, pickling spices, and water to the Instant Pot. (photo 1)

Place the corned beef brisket, fat side up, on the rack on top of the onions. Place the lid on the Instant Pot and lock it into place. Set the steam release knob to the sealing position. Press the Manual button and set it to 85 minutes (1 hour 25 minutes). Corned beef brisket should be cooked until the internal temperature of 145°. (photo 2)

When the cooking cycle has finished, let it naturally release for 20 minutes, then manually release the remaining pressure. Once all steam has been released and the pressure valve has lowered, remove the lid. Remove the corned beef from the pressure cooker and place it on a cutting board and cover with aluminum foil to keep warm. (photo 3)

Strain the cooking liquid into a small bowl to remove the cooked onions and spices. Return 1 ½ cups of the strained cooking liquid to the Instant Pot and save the remaining liquid.

Add the potatoes, carrots, and cabbage to the pressure cooker. Place lid on the Instant Pot and lock it into place. Set the steam release knob to the sealing position. Press the Manual button and set it to 4 minutes. After the cooking cycle has ended, manually release the pressure. Once all the steam has been released and the pressure valve has lowered, remove the lid. (photo 4 & 5)

Slice corned beef against the grain. Spoon reserved cooking liquid over the corned beef slices. Remove vegetables from the Instant Pot with a slotted spoon and serve with the corned beef.

Store leftovers in an airtight container and refrigerate. Reheat leftovers in the microwave.
Is Corned Beef Gluten-Free?
Corned beef is naturally gluten and dairy-free, but the additives may not be. Corned beef is made from brisket and goes through a long curing process using large grains of rock salt and brine.
Make sure the corned beef you choose is labeled gluten-free and there is no dairy listed in the ingredients.
Corned Beef is readily available all year long. It comes pre-packaged and will be in the meat department. (I buy it at Walmart)
What To Serve With Corned Beef?
I like to also make either gluten-free rolls, gluten-free cornbread, gluten-free biscuits, or gluten-free bread with corned beef and cabbage.

One of the great things about cooking corned beef in the Instant Pot is that the vegetables are also cooked in the same pot! I also love that the vegetables always come out tender and not mushy.

- 1 packet pickling spice packet from the corned beef
- 3 cup cups water
- 4 pound gluten-free corned beef brisket, rinsed
- 4 cups baby potatoes
- 2 cups baby carrots
- 1 small cabbage, cut into 4 wedges
