Almond Flour Cake

This almond flour cake is an easy one-bowl recipe. It only takes a few simple ingredients to make this moist cake. This almond flour cake recipe is made a little different than my other gluten-free cake recipes because it is made with almond flour.

Baking with almond flour is different than baking with traditional wheat flour or gluten-free flour blends made with rice. It has a mild nutty flavor, and baked goods made with almond flour have a thicker and denser texture.

Almond flour is also packed with protein, healthy fats, and fiber. Almond flour is also gluten-free, grain-free, and low in carbohydrates.

Ingredients In Almond Flour Cake

  • Almond flour: It is essential for the texture to use super fine, blanched almond flour and not an almond meal. Almond meal is ground almonds that still have skins. Using almond meal will change the texture and flavor of the cake.
  • Baking powder and baking soda: These leavening agents provide lift and fluffy texture.
  • Salt and pure vanilla extract: Helps balance and enhances the flavors.
  • Sugar: Not only does it sweeten this cake, but it also helps keep the cake moist. 
  • Eggs: They are important in binding the ingredients together and for the cake’s texture. 
  • Milk: It helps give the cake a little extra moisture and flavor. You can substitute unsweetened almond milk fo the dairy-free option. 

How To Make Almond Cake

  • Preheat oven to 350°F. Prepare an 8 x 8-inch metal baking pan with parchment paper.
  • In a medium-sized bowl, add the almond flour, baking powder, baking soda, salt, and sugar and mix together until well combined. (photos 1&2)
  • Add in the eggs, pure vanilla extract, and milk and stir thoroughly until well combined. (photo 3)
  • For a smoother end result, place cake batter into a blender and blend for 5-10 seconds until smooth. Whether you blend your batter or not, set your bowl aside to rest for 15 minutes. (photo 4)
  • Once the batter is done resting, fill the parchment paper-lined 8 x 8-inch pan and smooth the top with a spatula until the batter is evenly distributed. (photo 5)
  • Bake at 350°F for 23-25 minutes or until a toothpick comes out clean. Be sure to watch towards the end of baking as the cake top can brown if you bake it too long. (photo 6)
  • Allow the cake to completely cool before lifting the parchment paper from the baking pan and slicing. 
  • Top with our favorite Vanilla Frosting. Enjoy!

Yes, almond flour is gluten-free. The flour is made by finely grinding blanched almonds into a flour. Almond flour is also grain-free and is a low-carb flour. It is often used in Paleo and Keto recipes as well.

This almond cake does not need to be refrigerated. Store leftovers in an airtight container.

How To Freeze Almond Flour Cake

The almond flour cake can be easily frozen once completely cooled. Wrap the cake with foil or plastic wrap and then place in a plastic freezer bag. The cake can be frozen for up to 3 months.

Tips For Making The Best Almond Flour Cake

  • Always use super fine blanched almond flour and not almond meal.
  • To keep the almond cake from sticking to the baking pan, line the pan with parchment paper or spray heavily with cooking spray.
  • Do not over-bake the almond cake, as it will make the cake drier. The cake will continue to cook as it is cooling down. Just make sure to check the middle with a toothpick. 
  • Be patient and allow the cake to completely cool before slicing. I often make the cake the night before and slice it in the morning.

How To Serve Almond Flour Cake

This almond cake can be served with or without frosting. You can also serve it with fresh berries and whipped cream, or with a dusting of powdered sugar.
