Gluten-Free No-Bake Cookies
It is officially Summertime, and it’s already 100 degrees here in North Flordia! When it’s super hot outside, the last thing I want to do is turn on the oven and bake, so I like making easy no-bake desserts.
I like to make treats for my kids, and these no-bake cookies made with Schär gluten-free crackers are a quick and easy way to make a special treat. These cracker cookies are so easy to make!
You only need a few ingredients and can whip up these cookies in less than 15 minutes. Not only are these cracker cookies gluten-free, but they can also be made lactose-free as well.
How To Make No-Bake Cracker Cookies
- Line a banking sheet with parchment paper.
- Spread 12 crackers with peanut butter and 12 crackers with marshmallow fluff.
- Place the marshmallow covered crackers on top of the peanut butter covered crackers to make a cracker sandwich.
- Melt the gluten-free chocolate flavored candy melts in microwave safe bowl according to the package directions.
- Or melt 2 cups of gluten-free chocolate chips and 1 tablespoon of vegetable oil in a microwave safe bowl in 30-second intervals, stirring in between, until completely melted.
- Place the cracker sandwich in the melted chocolate and flip over with a fork to cover the entire sandwich with chocolate.
- Remove the cookie from the bowl by sliding the fork underneath the cookie and lifting out of the bowl and place on a parchment paper-lined baking sheet. Top the cookie with gluten-free sprinkles. Repeat until all the cracker sandwiches are covered with chocolate.
- Place in the freezer for 5-10 minutes. Enjoy!
- Store leftovers in an air-tight container.
