    These sweet and salty no-bake cracker cookies are a delicious combination of chocolate, peanut butter, and marshmallow. A super easy no-bake gluten-free cookie recipe.

    Gluten-Free No-Bake Cookies

    It is officially Summertime, and it’s already 100 degrees here in North Flordia! When it’s super hot outside, the last thing I want to do is turn on the oven and bake, so I like making easy no-bake desserts.

    I like to make treats for my kids, and these no-bake cookies made with Schär gluten-free crackers are a quick and easy way to make a special treat. These cracker cookies are so easy to make!

    You only need a few ingredients and can whip up these cookies in less than 15 minutes. Not only are these cracker cookies gluten-free, but they can also be made lactose-free as well.

    How To Make No-Bake Cracker Cookies

    • Line a banking sheet with parchment paper.
    • Spread 12 crackers with peanut butter and 12 crackers with marshmallow fluff.
    • Place the marshmallow covered crackers on top of the peanut butter covered crackers to make a cracker sandwich.

    • Melt the gluten-free chocolate flavored candy melts in microwave safe bowl according to the package directions.
    • Or melt 2 cups of gluten-free chocolate chips and 1 tablespoon of vegetable oil in a microwave safe bowl in 30-second intervals, stirring in between, until completely melted.
    • Place the cracker sandwich in the melted chocolate and flip over with a fork to cover the entire sandwich with chocolate.
    • Remove the cookie from the bowl by sliding the fork underneath the cookie and lifting out of the bowl and place on a parchment paper-lined baking sheet. Top the cookie with gluten-free sprinkles. Repeat until all the cracker sandwiches are covered with chocolate.
    • Place in the freezer for 5-10 minutes. Enjoy!
    • Store leftovers in an air-tight container.

    Gluten-Free Crackers

    The Schär Entertainment Crackers were the perfect choice for these no-bake cracker cookies. Not only do they have a rich and buttery flavor, but they also don’t crumble when you spread the peanut butter or marshmallow fluff on them.

    These crackers are not hard like some other gluten-free crackers on the market. They have an amazing texture and flavor.

    I love that I can easily find Schär gluten-free products at Walmart and my local grocery store. You can use their store locator to find a store that carries them near you.

    Everyone loves peanut butter crackers and these no-bake cookies take peanut butter crackers to a whole new level. With the addition of marshmallow fluff (can you say fluffernutter?!) and a chocolate coating, these are no longer crackers but are now sweet and salty no-bake cookie.

    These cookies are so easy to make even your kids can help make them! They are perfect as a quick special treat and for birthday parties!

    I often whip them up when we have friends over. Everyone always loves them, even if they are not gluten-free.

    Ingredients

    • 24 Schär Entertainment Crackers

    • ¼ cup peanut butter , or nut/seed butter of choice
    • ¼ cup gluten-free marshmallow fluff
