Gluten-Free Pizza Bites
Who does not love pizza? Seriously, I love pizza! It’s the one thing I miss the most since going gluten-free.
I’ve made gluten-free pizza crusts over the years, bought pre-made pizza crusts and bought frozen gluten-free pizza. See, I am not ready to give up on my love affair with pizza just because I’m gluten-free.
When I need to get my pizza fix and want an easy and quick recipe, I make my deep dish pizza bites. All the flavor of pizza without all of the work!
Gluten-Free Pizza Bites In A Few Easy Steps

- Preheat oven to 425° F. This gluten-free pizza dough is super easy to make. In a medium bowl beat the two eggs. Add the garlic, basil, and oregano to the eggs and stir until fully combined. Add the gluten-free Bisquick, water, and olive oil. Mix until fully combined. The dough will not be thick, it will be more like cake batter. (photo 1)
- Spray a regular sized muffin pan with cooking spray. Add 3/4 of the crust batter to the muffin pans. I like to use an ice cream scoop. (photo 2)
- Sprinkle mozzarella cheese over the top of the crust batter. (photo 3)
- Spoon pizza/spaghetti sauce over the mozzarella cheese (or dairy-free cheese). (photo 4)
- Add another layer of mozzarella cheese over the sauce and top with your favorite pizza topping(s) (optional). (photo 5)
- Bake for 15 minutes at 425° F. Please watch your pizza bites because all ovens are different.
- Allow to cool for 1-2 minutes before removing from pan and enjoy! (photo 6)
- Store leftovers in an air-tight container. Reheat in the microwave or oven.

Gluten-Free Bisquick
This recipe is super simple using one of my favorite products – gluten-free Bisquick. If you don’t have gluten-free Bisquick you can use this recipe to make your own.
Dairy-Free
These pizza bites are super easy to make dairy-free. Just use your favorite brand of dairy-free shredded cheese. The gluten-free pizza dough in this recipe is already naturally dairy-free. So you can also have gluten-free and dairy-free pizza bites.
My husband, youngest son and I are all dairy-free as well so we have tried a lot of brands of dairy-free cheese. We have used Trader Joes, Daiya, Follow Your Heart, Violife and Parmela Creamery.
The batter for the crust is easily whipped up and baked in a muffin pan. Top with your favorite pizza toppings and in a quick 12 minutes, you will have bubbly deep dish pizza bites.
These would be perfect for school lunches, a quick and easy dinner, an after-school snack or for your next party.

Gluten-Free Pizza Bites

Ingredients
- 1 1/3 cups Bisquick Gluten Free mix, (or make your own with the recipe linked below in the recipe notes)
- 1/2 teaspoon garlic powder
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 cup water
- 1/3 cup olive oil
- 2 eggs, , beaten
- cooking spray, (I like olive oil cooking spray)
- shredded mozzarella cheese, , or dairy-free shredded cheese
- gluten-free pizza or spaghetti sauce, (I like Prego)
- favorite pizza toppings, , optional
Instructions
- Preheat oven to 425° F.
- In a medium bowl beat the two eggs.
- Add the garlic, basil and oregano to the eggs and stir until fully combined.
- Add the gluten-free Bisquick, water, and olive oil. Mix until fully combined. The dough will not be thick, it’s more like cake batter.

- Fill each tin 3/4 full with the crust batter. I like to use a greased ice cream scoop.
- Sprinkle mozzarella cheese over the top of the crust batter.
- Spoon pizza/spaghetti sauce over the mozzarella cheese.
- Add another layer of mozzarella cheese over the sauce.
- Top with your favorite pizza topping(s) (optional)
- Bake for 15 minutes.
- Allow to cool for 1-2 minutes before removing from pan. Enjoy! Store leftovers in an air-tight container. Reheat in the microwave or oven.

Just made these tonight! They were wonderful. I filled my cupcake pan up too full, so the bread to topping ratio was a bit off (user error) but they were still incredible. Thank you!
These look so tasty! I did not see any comments below regarding making ahead and freezing. Would that be recommended? (having a Christmas get together and I don’t want to be cooking all day!)

Any thought on best form of reheating? On a sheet pan at 200 in the oven??
Hi Heather, I would reheat at 350 for about 8-10 minutes until warmed through.

I followed the recipe exactly. The recipe was easy. They also warm up nicely without drying out, in the microwave
I use the extra sauce for dipping.

I was so hopeful. These turned out so dry. I do have to bake using a convection microwave, so maybe that’s the problem. Do you recommend a way to doctor these up when we go to reheat them? Hate to throw out/waste food.

made recipie but pictures do not reflect steps correctly causing a happy variant. when looking at pic I put pepperoni on sauce thinking next step3 loked like that is what you did. went back to step by step inst. and realized my mistake but i only removed pepperoni from 2 of the 6 leaving pepperoni on 4. (only made half the recipe). then followed steps with cheese then toppings…cooked a little longer to compensate for the liquid releasing from the few cut pieces of pepperoni in the middle.maybe 17 min. liked the double pepperoni ones more than single layer and significant other who normally likes crusty pizza still , liked these even though they are not crunchy. Can’t wait to pop this on my gluten free daughter in law.
Have you made these without adding the sauce? I was thinking of keeping the sauce on the side for dipping.

My daughter said that these were really good. The pizza bites had a really good texture and were not dry, as some gluten-free breads are. The seasonings made the crust taste delicious, so that it was not just a tasteless carrier of toppings. We use King Arthur Gluten-free Baking Mix rather than Bisquick because my daughter cannot have refined sugar, and Bisquick Gluten-free mix has some sugar. The recipe made enough to fill 12 regular-size muffin cups almost half full. They did dome up in the middle, so the toppings were all around the edges rather than evenly placed, but that certainly did not hurt the taste at all. Thank you for an excellent gluten-free snack.
