Best Flour for Gluten-Free Cake Recipes

To make these cake recipes, use a gluten-free all-purpose flour with xanthan gum, unless the recipe specifically says otherwise. The xanthan gum is what gives gluten-free baked goods some elasticity, so it’s important to make sure it’s in the flour you use.

For convenience, use a 1:1 gluten-free flour from your favorite brand. We tested a range of flours, and found the best gluten free flours for baking to help you choose.
