Gluten-Free BBQ Chicken

We eat a lot of chicken in our home. One of my family’s favorite meals is my Crispy Chicken ThighsIt’s an easy and budget-friendly meal that everyone loves.

I wanted to make a different flavor twist to our favorite chicken thighs meal. Our family also really loves BBQ so I thought about using a homemade BBQ rub on the chicken thighs.

I also wanted to take these to the next level of crispy than my original recipe, so I added gluten-free bread crumbs to make the BBQ chicken thighs even crunchier.

How To Make Crispy Baked BBQ Chicken Thighs

This meal is super easy to make and you only need a few ingredients. I’m sure you already have everything you need to make the homemade spice rub in your pantry.

Combine the seasoning in a small bowl and stir to fully combine. Melt the butter in a small bowl and measure out the gluten-free bread crumbs.  (photo 1)

Place chicken thighs in a greased 9×13 glass baking pan. Rub one tablespoon of the BBQ dry rub on each chicken thigh. (photo 2)

Sprinkle the bread crumbs over each chicken thigs. (photo 3)

Pour the melted butter all over the chicken thighs. Place in the oven and bake for 50 minutes at  375° F. (Photo 4)

The chicken thighs will be done once they are no longer pink at the bone and an instant-read thermometer inserted near the bone should read 165° F. (photo 5)

What to serve with BBQ Chicken?

I served the Crispy Baked BBQ Chicken Thighs with roasted corn. It was so easy to pop the corn into roast while the chicken was baking.  The roasted corn made a perfect side dish for the baked BBQ chicken! Crispy Baked BBQ Chicken Thighs {Gluten-Free with Paleo & Whole30 Option)

Crispy Baked BBQ Chicken Thighs is a meal that is in the oven in just minutes for a delicious and budget-friendly dinner. Covered in a homemade BBQ dry rub and gluten-free bread crumbs for a crispy and crunchy crust. Gluten-free with a dairy-free option. 

Ingredients 

  • 6 bone-in chicken thighs with skin
  • 3/4 cup gluten-free bread crumbs
  • 1/2 cup unsalted butter, ,dairy-free Smart Balance/Earth Balance, Whole30 use olive oil or coconut oil

BBQ Rub

  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 teaspoon mustard powder

Instructions 

  • Preheat oven to 375° F.
  • Spray a 9×13 glass baking pan with gluten-free cooking spray.
  • Place chicken thighs in the baking pan.
  • In a small bowl combine the brown sugar,  garlic powder, onion powder, chili powder, salt, paprika, cumin, and mustard powder together in a small and stir until fully combined. 
  • Take one tablespoon of the BBQ dry rub and rub it on each chicken thigh. You will use one tablespoon of the BBQ dry rub for each chicken thigh. 
  • Sprinkle the breadcrumbs over the chicken thighs.
  • Drizzle melted butter (or dairy-free butter) all over the chicken thighs.
  • Bake chicken for 50 minutes at  375° F or until the thighs are no longer pink at the bone, and the juices run clear. An instant-read thermometer inserted near the bone should read 165° F.
  • Enjoy!

  1. Second time to make these wonderfully delicious baked chicken thighs! The whole family loves them. Not sure why my experience with GF bread crumbs sometimes turn out mushy in other recipes. Opted for Lance GF baked original crackers (crushed in a baggie) as the topper for these and they baked up great! Thank you for such flavorful GF recipes the whole family enjoys!

Made this for dinner tonight and my husband just said “honey I have one complaint, there just wasn’t enough!” I substituted the thighs for boneless breasts and left out the salt bc of my husbands high blood pressure. And we didn’t have any gluten free bread crumbs bc my oldest had used them a few nights ago when she had cooked, so we used crushed up corn flakes since they too are gluten free. This will definitely be a recipe we use again. Only thing is I will have to make way more for our family of 7!

  3. I enjoyed sharing this recipe with my family, it was quite tasty. The only thing that I would change is the amount of salt. It reads one TBS but I think that one Tsp would do just fine.

  4. I really enjoyed this dish. Quick and tasty dishes when you’re Celiac are worth their weight in gold and this was fast and simple. I’m not crazy about a lot of the gluten free breadcrumbs available, so I used Lance’s gluten free crackers, crushed and mixed with the butter to top the chicken. Worked out beautifully.
    The rub was very good – I’m not fond of too spicy dishes and this was flavorful and had a nice balance of sweetness and spice without being too heavy or overpowering. I’ll be adding this recipe to the ‘keep and use again’ category. Thank you!
